Seeded Granola

Makes 2kg (stores well in an air tight container for 10 days)

Portion: 3 tbsp / 42grams

Ingredients:

  • 270 g Oats
  • 120 g Quinoa flakes
  • 120 g Spelt flakes
  • 420 g Sunflower seeds
  • 390 g Pumpkin seeds
  • 180 g Ground flaxseed
  • 100 g Desiccated coconut
  • 168 g Coconut oil
  • 24 g Cinnamon
  • 45 g Agave/maple syrup
  • 12 g Vanilla extract
  • Zest of 1 Orange (optional)

Preparation

  1. Melt the coconut oil, with the syrup, vanilla and cinnamon.
  2. Add the rest of the ingredients, mix together and spread on a baking tray.
  3. Bake for 20 minutes or until golden, stir half way through to ensure even cooking.
  4. Allow to cool and store in an air tight container

Serve with either milk or yogurt.
