with black beans, broccoli, butternut, hummus and breadsticks

Budda Bowl Recipe

Ingredients

  • Butternut Squash
  • Sweet potato
  • Black beans
  • Broccoli
  • Green olives
  • Avocado
  • Bread sticks
  • Carrots

Preparation

Peel butternut squash and sweet potato and cut into 1-2cm cubes. Place in a banking tray, drizzle with olive oil, thyme and put in the oven on a low heat for up to 45 minutes.

Cut carrot into 1- 2 cm cubes, drizzle with olive oil agave and roast until tender and golden and put in the oven on a low heat for up to 45 minutes.

Steam broccoli, slice avocado and drain cooked black beans and olives.

Hummus Recipe

Ingredients

  • 6-9 garlic cloves
  • 1200 g chickpeas, cooked
  • 180 g water
  • 90 g lemon juice
  • 210 g extra virgin olive oil, (plus a little extra to garnish)
  • paprika

Preparation

We used a Thermomix to make our hummus but this could also be prepared in a food processor or blender.

  1. Place garlic, cooked chickpeaswaterlemon juice, toasted sesame seedssalt and olive oil into mixing bowl and blend 1 min/speed 5-10, increasing speed gradually.
  2. Transfer hummus to a plate, drizzle with a little extra virgin olive oil and sprinkle with paprika or cumin. Serve cold or at room temperature.

Note: When everything is ready, place in separate serving dishes. Guide children to self serve and build their own budda bowl .
