Breakfast or pudding overnight oats

Preparation, ingredients and macronutrients

Makes 48 portions based on 2 x 50ml scoops

Ingredients:

1250g oats

5 tbsp chia seeds

5 tsp cinnamon

5 tbsp ground flaxseed

5 grated carrots, courgettes or parsnips or a mix (unpeeled)

5 tsp vanilla extract

2500-2750ml plant milk (adjust depending on preferred consistency)

To serve:

Stewed fruit such as apple puree, with the skin on, sliced bananas or defrosted frozen berries

Preparation

  1. Place the oats, chia seeds, cinnamon and ground flaxseeds in a large bowl and mix together
  2. Add the grated vegetables and vanilla in the bowl, then stir in the milk
  3. Ensure ingredients are left to soak overnight or for 6 hours in the fridge
  4. Serve with your chosen fruit
